Explore the world of coffee processing and the impact it has on coffee flavour with this Filter Duo gift set. Both these coffees are from the Kinini washing station, grown in same terroir, with the same Bourbon 139 varietal but processed as a natural and a washed. In the washed we're getting a rounded body with clean, balanced fruit flavours of cherry and lemon zest and in the Natural, a heavier, juicy texture with notes of pomegranate, milk chocolate and candied lime.
Story
Since our visit to this washing station back in 2017 we've loved having these coffees in our range and know first hand the work that goes into making their coffee. Agronomists are on hand year round to help farmers improve quality so that in turn they can receive a higher yield and price for their coffee. As well as the washing station, a school and health centre is provided for the 633 members of the Kinini Co-op. A road has also been built so that, once freshly picked cherries are delivered quickly to the washing station for processing.
Processing
The traditional method of processing coffee in Rwanda is wet or washed process. At Kinini, the washing is located next to a stream which provides clean water for drinking as well as processing the coffee. Once picked, it is de-pulped with modern, water efficient machines, fermented for between 5 - 20 hours and then sun dried for about 15 days depending on the intensity of the sun.
The natural is dried on raised african beds with the cherries intact on the bean (seed) and turned regularly. As it dries in the equatorial sun, sweetness and body is intensifies from the cherry much like raisin compared to a grape!
