Japanese Sencha is an example of a tea that has been enjoyed in the Orient for over 5000 years. The high quality grade of leaves delivers a delicate drink full of natures benefits. Lower in caffeine and full of antioxidants, it can even help with weight loss! Technically this is a "Japanese Sencha Fukujyu" meaning "Green Spider Legs" and is grown in the foothills of Mount Fuji. Sencha is made up from the new shoots of the plant, the first and second flush giving more flavour complexity in the tea.
After picking, the tea is steamed before being pan fried, giving a dark green colour to the leaves. Once brewed you can expect a golden green liquor with some refreshing, grassy notes and faint citrus sweetness. The steaming process, which differs from the Chinese Sencha production which is just pan fried, contributes to a fuller body and more vegetal notes. We recommend brewing at 70C for 2-3 minutes.
