Asagiri Matcha is a high-quality, ceremonial-grade Matcha from in Kirishima, Japan. Grown in 90% shade cover, it produces a slightly nutty, umami taste with notes of pistachio and avocado. The production of Matcha is very labour intensive but produces a unique tasting tea.
Only the youngest shoots are picked, between March and May then steamed to prevent oxidation. After this, leaves are air dried then de-stemmed and de-veined. These leaves, called "Tencha" go on to produce matcha. "Tencha" is ground into a very fine powder in stone mills, taking up to one hour to produce 30g of Matcha.
1. Use 1g of Matcha per 100ml of water between 50-60C.
2. Whisk is a bowl until you have a frothy consistency.
3. This is the traditional way to enjoy matcha but it also tastes great chilled over ice with coconut milk or with warm steamed milk.
