Our Cupping Guide
1. Weigh out 12g of coffee in to 210ml cupping bowls or glasses then grind on a medium setting.
2. The Brew : Fill the cupping bowls to the rim with water off the boil, pouring quickly to ensure all the grounds are well saturated.
3. The Brew : Leave to brew for 4 minutes.
4. The Break: Using the cupping spoon, break the crust of the coffee and stir gently. While breaking the crust, this is a good point to get in there and smell the coffees aroma.
4. The Skim: Use two spoons to remove any floating grounds and foam from the surface.
5. The Slurp: Some cuppers slurp so loud their whistles echo round the room. Others are more delicate. However you do it, the idea is to imagine your lips and tongue are like a plant spray trying to reach all your olfactory sense across you entire palate. Don’t forget to sniff as well.
