The Drip Assist is an innovative new piece of kit developed by Hario in collaboration with 2013 World Barista Champion Pete Licata. Acting like a shower screen on a filter machine, the Drip Assist regulates the flow of water over the coffee grounds for use with a 2 cup V60 or variety of filter cones. Two different sized holes allow for better control of speed, turbulence and evenness of extraction when brewing. The holes around the outside pour at a slower rate of around 3.5g per second and the inner holes at around 8.5g per second. This is great if you're using a regular kettle instead of drip kettle because no matter how fast you pour, the water will always drip through at a consistent rate.
The inner holes allow a faster flow which also adds more turbulence, ideal for the bloom phase and churning up the coffee bed at the beginning of the brew. The slow dripping outer holes allow a more gentle flow to help achieve an even extraction. Here's an example of a super easy recipe to try to get great results with the Drip Assist.
Dose : 30g
Brew Weight : 500g
Time 2:30
1. Preheat with water off the boil, wetting the paper filter.
2. Add coffee and pour 60g of water in the inner holes.
3. After 30 seconds pour to 300g aiming for the outer and occasionally inner holes
4. At around 1:30 (or when they slurry starts to fall) pour to 500g aiming for the outer holes only.
5. The coffee should drain though in around 2:30
No need to worry about your speed of pour, just how much and how often. Make sure you preheat the Drip Assist before brewing and use slightly hotter water than usual as the drip assist will drop the brewing water temp slightly.
