This rare Pink Bourbon coffee, a hybrid of red and yellow bourbon, from Granja La Esperanza's Potosi farm highlights sweet notes of raspberry, white chocolate and red apple with a crisp, balanced acidity.

The Farm

After taking over the family farm, dating back to the 1930s, Rigoberto and Luis decided to take their coffee in a new direction when they began growing organic coffee in the 90's. They soon acquired another farm, La Esperanza to keep up with organic production and in 2007 Rigoberto leased a farm in Panama called La Carleida. Here he won first prize for "Best Coffee in Panama" for a Geisha varietal, the seeds of which were brought back to Colombia starting a new era for coffee at Cafe Granja La Esperanza. Five farms now make up the Estate; Potosi, La Esperanza, Hawaii, Cerro Azul and Las Margaritas growing competition winning coffees where varietals are matched with processes to create unique flavour profiles.

This particular coffee comes from Potosi farm growing 188725 trees. Here conditions are perfect for growing coffee sitting in a temperature band between 17-22°C with an average rainfall of 1340mm per year and humidity around 73%.

The Coffee

This is a very rare Pink Bourbon variety which goes on to be Hybrid Washed. This processing method helps bring out some fruit notes whilst maintaining the crisp flavour clarity of a washed coffee. Coffee is fermented for between 48 and 50 hours then washed and pulped before being moved to solar drying beds where it remains for 28 days. The result is complex but balanced coffee with raspberry and apple fruit notes and creamy white chocolate sweetness.
