This black honey lot of Catuai and Caturra from multiple producers is a great example of how a coop can collaborate with farmers to produce a high-end, speciality coffee. This lot is packed with rich sweetness similar to very ripe, dark berries, has thick and juicy mouthfeel like cloudy apple juice and flavour notes which remind us of stewed plums, blackberries and custard.

ASOPROAAA was established in 1998 following the destruction Hurricane Mitch caused in the region and still offers financial, commercial and technical assistance to its members. More than 2,000 houses were built for people with limited resources as part of a special program to improve the livelihoods of members in the community. Years on since this disaster, ASOPROAAA have helped micro lots to win numerous quality awards, regularly placing in the finals of the Cup of Excellence competitions.

This particular lot is a collection from the Cooperative which goes on to be Black Honey Processed. Of all the Honey processing methods, this leaves the most mucilage on the cherry after pulping and for the longest time before being dried on raised African beds. This intensifies body and sweetness much like a natural but gives slightly less of that funky natural flavour.
