This 84% Madagascar Chocolate originates from the fertile soils of the Ambanja district, part of the Sambirano Valley in Madagascar. Specifically, the single plantation Bejofo Estate owned by Bertil Ã…kesson.
Bertil bought the estate back in 1998 and has since managed to develop high quality cocoa in a sustainable way and with 3,000 farmers. Here cacao is grown, fermented and dryed with good farming practices and consistent protocols.
Working in small batches with minimal ingredients, Table Chocolate aim to bring out the true flavours in chocolate, exploring varieties and terroir with a focus on sustainability and traceability.
