To really get our teeth into coffee processing we’ve extended our process pack into a selection of 6 125g bags. If you’re new to coffee processing, this is the method by which the fruit of the cherry is removed from the seed (bean) before drying, hulling, roasting and finally, brewing. Natural coffees are sun dried with the cherry left on which intensifies fruit flavours (think sundried tomato), Washed coffees have all the fruit removed with water to give a more balanced flavour and pleasant acidity while Honey coffees have the skin of the cherry removed but keep the inner flesh intact during drying, bypassing soaking in fermentation tanks. Process has a huge effect on the taste of a coffee, imparting more stone fruit and boozy flavours in a natural, brighter acidity, floral aromas and citrus notes to a washed to everything in-between with Honey, Pulped Natural (Sumatran style Honey process) and Wine Yeast Fermented coffees. “Wine Yeast Fermented?” Ok, this is really washed but with the twist of adding wine yeast to the fermentation tank during soaking to speed up this stage and help develop acids which give a malic, pear-like or sparkling acidity!
