The Bourbon variety is known to have exceptional sweetness and mild acidity, which explains why it's such a house favourite here at Atkinsons. Yellow Bourbon is a spontaneous mutation that ripens to a yellow colour, has similar flavours to the red but often displays increased acidity and brightness in the cup. The Pulped Natural Process is a Brazilian approach similar to the currently popular 'honey' processes. With just the skins removed allowing more of the pulp to stay in contact with the bean during the drying process, giving us that much sought after natural body of fruity ferment and the characteristic sweetness and gentle acidity of washed coffees.
New discoveries are still being explored in the coffee lab to determine how the colour of the skin influences the flavour profile, further unlocking the secrets of the most complex beverage known to the human palate!
