Episode 5 - Chemex
Katytis Makes Coffee - Chemex - Katytis takes us through his method for best results with this design classic, the Chemex! The Chemex has been around since the 1930s and has become a firm favourite among baristas and coffee enthusiasts, like Katytis!

Using only paper and glass, the Chemex is a very simple way of brewing coffee. A slightly thicker paper means more fines are filtered out giving a really clean, crisp mouthfeel. The flip side of this is that it can result in a longer brew time. To compensate for this, we recommend grinding slightly coarser than usual and dosing up slightly. Don't worry if your chemex takes a little longer to brew though. Anything under 5 minutes will taste great!

Our top tips for brewing with Chemex. Because Chemex papers are extra thick, we recommend giving them a thorough rinse before brewing. This helps clean the paper of any taints and also helps warm up the Chemex itself. To reduce heat loss when brewing it's also a good idea to keep the "slurry" full (the upper part where water is poured over the grounds). A larger body of hot water helps retain a higher brewing temperature which helps extract more from the coffee.
